Preheat your oven to 350°F (180°C) and line baking trays with parchment paper.
Roll the chilled dough between two sheets of parchment to about ¼-inch thickness. Use a round cookie cutter to cut out biscuits and place them on the prepared trays.
Step 3: Bake
Bake for 10–12 minutes, until the cookies are set but not overbaked. They will firm up as they cool.
Let cookies cool completely before filling.
Step 4: Make the Cream Filling
Beat butter until smooth. Gradually add powdered sugar and vanilla. Add milk a tablespoon at a time until the filling is smooth and spreadable.
Step 5: Assemble the Sandwich Cookies
Pipe or spread filling onto the flat side of half the biscuits. Top with remaining biscuits to form sandwiches.
Gently press together.
Step 6: Dip in Chocolate
Melt dark chocolate with coconut oil using a double boiler or microwave in short bursts.
Dip the tops of the sandwich cookies into the melted chocolate or drizzle generously. Place on parchment paper and allow chocolate to set.
