Introduction:
If you love quick comfort food that still feels a little fancy, these Creamy Garlic Prawn Toast Melts
are about to become your go-to. Picture this: buttery toasted bread, topped with a rich creamy garlic prawn mixture,
finished with melted cheese and a golden, bubbly top. They’re part seafood appetizer, part café-style melt—and they come together
fast enough for a weeknight, but impressive enough for guests.
The flavor is built on simple but powerful ingredients: garlic, butter, lemon, a touch of cream (or cream cheese),
and tender prawns that cook in minutes. You can serve them as a party snack, a light dinner with salad, or a weekend treat
when you want something indulgent without a long recipe.
Ingredients:
For the prawns:
- 12 oz (340g) prawns/shrimp, peeled and deveined (tails removed)
- 1 tbsp butter
- 1 tbsp olive oil
- 3–4 cloves garlic, minced
- 1 tbsp lemon juice
- 1/2 tsp salt
- 1/4 tsp black pepper
- Optional: pinch of chili flakes
Creamy mixture:
- 4 oz (113g) cream cheese, softened (or 1/3 cup heavy cream for a looser sauce)
- 2 tbsp mayonnaise (optional, extra richness)
- 2 tbsp grated Parmesan
- 1 tbsp chopped parsley
- Optional: 1 tsp Dijon mustard
For the toasts:
- 6–8 slices sturdy bread (sourdough, baguette slices, or thick sandwich bread)
- 1–2 tbsp butter (for toasting)
- 1 cup shredded mozzarella (or cheddar, or a blend)
- Optional: extra Parmesan for topping
- Optional garnish: parsley, lemon zest, extra chili flakes
Instructions:
- Preheat broiler (or oven).
Set broiler to HIGH. Line a baking sheet with foil. - Toast the bread lightly.
Butter both sides lightly and toast in a skillet or under the broiler for 1–2 minutes per side
until just lightly golden. (This helps prevent sogginess.) - Cook the prawns.
Heat butter and olive oil in a skillet over medium heat. Add garlic and cook 30 seconds until fragrant.
Add prawns, salt, pepper, and chili flakes (optional). Cook 1–2 minutes per side until pink and just cooked.
Splash in lemon juice. Remove from heat. - Make it creamy.
