Chicken Pot Pie Casserole

Flaky biscuits on top, creamy chicken filling underneath — this is the ultimate shortcut comfort meal your family will request again and again!


Ingredients

For the Filling

  • 2 cups cooked shredded or cubed chicken

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup milk

  • 1 cup shredded cheddar cheese (optional)

  • 1 bag (12 oz) frozen mixed vegetables (peas, carrots, corn, green beans)

  • ½ cup diced onion (optional)

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • ½ tsp black pepper

  • ½ tsp salt (adjust to taste)

  • ½ tsp paprika

  • 1 tbsp butter or olive oil

For the Biscuit Topping

  • 1 can refrigerated flaky biscuits (like Pillsbury Grands)

  • Cut each biscuit into 4 pieces

STEP 1 — Preheat Your Oven

  • Preheat oven to 375°F (190°C).

  • Grease a 9×13-inch casserole dish.


STEP 2 — Prepare the Chicken Filling

  1. In a large bowl, mix together:

    • Cream of chicken soup

    • Milk

    • Cheddar cheese (if using)

    • Mixed vegetables

    • Cooked chicken

    • Garlic powder, onion powder, paprika

    • Salt & pepper

  2. Stir until everything is fully combined and creamy.


STEP 3 — Pour into Baking Dish

  • Spread the mixture evenly in your prepared casserole dish.


STEP 4 — Add Biscuit Topping

  1. Open the can of biscuits.

  2. Cut each biscuit into four small pieces.

  3. Arrange them evenly over the top of the chicken mixture.

  4. Optional: Brush with melted butter for extra richness.
