For the Casserole

For the Gravy

1 medium onion, sliced

3 tbsp all-purpose flour

2 cups chicken broth

STEP 1 — Prepare the Potatoes

Preheat your oven to 375°F (190°C).

Place the halved baby potatoes on the bottom of a greased 9×13 baking dish.

Drizzle with olive oil, salt, pepper, garlic powder, and paprika.

Toss lightly to coat and spread evenly.
STEP 2 — Season the Pork Chops

Pat pork chops dry.

Season both sides with salt, pepper, onion powder, and paprika.

Lay the pork chops neatly over the potatoes (as shown in the image).
STEP 3 — Make the Gravy

In a skillet over medium heat, melt butter.

Add sliced onions and sauté until soft and golden.

Sprinkle flour over the onions and stir for 1 minute to form a roux.

Slowly whisk in chicken broth until smooth.

STEP 4 — Smother and Bake
