Smothered Pork Chops with Potatoes in Gravy

A cozy, hearty, home-style dinner made with tender pork chops, buttery potatoes, and a silky onion gravy — all baked together in one dish. This is pure comfort food!


Ingredients

For the Casserole

  • 6–8 pork chops (bone-in or boneless)

  • 2 lbs baby potatoes, halved

  • 1 tbsp olive oil or melted butter

  • Salt & black pepper (to taste)

  • 1 tsp garlic powder

  • 1 tsp paprika

  • 1 tsp onion powder

For the Gravy

  • 3 tbsp butter

  • 1 medium onion, sliced

  • 3 tbsp all-purpose flour

  • 2 cups chicken broth

  • 1 cup heavy cream or half-and-half

  • 1 tbsp Worcestershire sauce

  • 1 tsp dried thyme (optional)

  • ½ tsp paprika

  • Salt & pepper (to taste)


🧑‍🍳 Instructions

STEP 1 — Prepare the Potatoes

  1. Preheat your oven to 375°F (190°C).

  2. Place the halved baby potatoes on the bottom of a greased 9×13 baking dish.

  3. Drizzle with olive oil, salt, pepper, garlic powder, and paprika.

  4. Toss lightly to coat and spread evenly.


STEP 2 — Season the Pork Chops

  1. Pat pork chops dry.

  2. Season both sides with salt, pepper, onion powder, and paprika.

  3. Lay the pork chops neatly over the potatoes (as shown in the image).


STEP 3 — Make the Gravy

  1. In a skillet over medium heat, melt butter.

  2. Add sliced onions and sauté until soft and golden.

  3. Sprinkle flour over the onions and stir for 1 minute to form a roux.

  4. Slowly whisk in chicken broth until smooth.

  5. Add heavy cream, Worcestershire, thyme, paprika, salt, and pepper.

  6. Simmer 2–3 minutes until the gravy thickens slightly.


STEP 4 — Smother and Bake

  1. Pour the warm onion gravy evenly over the pork chops and potatoes.

  2. Cover the dish tightly with foil.

  3. Bake 60 minutes, then remove foil.

  4. Continue baking 15–20 more minutes until pork is tender and the potatoes are soft.

Tip: For a golden top, broil for 2–3 minutes at the end.
