Cream and Berry Pastry Balls

Light, creamy, crunchy, and bursting with berry filling — these beautiful dessert balls look fancy but are incredibly simple to make. No baking required!


Ingredients

Cream Layer

  • 1 cup (240 ml) heavy whipping cream

  • 1 cup (225 g) cream cheese, softened

  • ¼ cup powdered sugar

  • 1 tsp vanilla extract

Berry Filling

  • 1 cup berry jam or pie filling (cherry, raspberry, strawberry, blueberry)

Outer Crunch Layer

  • 2 cups crushed vanilla wafers, ladyfingers, or tea biscuits

  • OR white chocolate sprinkles / shredded white chocolate

  • OR a mix of both for extra crunch

Optional

  • ½ cup melted white chocolate (for extra coating)

  • Freeze-dried berries or coconut flakes


👩‍🍳 Instructions

STEP 1 — Make the Cream Filling

  1. Using a hand mixer, beat the heavy cream until soft peaks form.

  2. In a separate bowl, beat the cream cheese, powdered sugar, and vanilla until smooth.

  3. Fold the whipped cream into the cream cheese mixture until light and fluffy.

  4. Refrigerate 15–20 minutes to firm up slightly.


STEP 2 — Prepare the Berry Center

  1. Scoop small portions (½ tsp) of berry jam or pie filling onto a plate.

  2. Freeze for 10–15 minutes to make shaping easier.


STEP 3 — Shape the Pastry Balls

  1. Take a spoon of cream mixture and flatten it slightly in your hand.

  2. Place a frozen berry center inside.

  3. Gently close the cream around it, forming a smooth ball.

  4. Repeat until all balls are formed.

  5. Freeze the balls for 15–20 minutes so they hold their shape.


STEP 4 — Add the Crunchy Coating

Choose ONE or mix:
✔ Crushed biscuits
✔ White chocolate shavings
✔ Sprinkles
✔ Coconut flakes

  1. Roll each chilled cream ball in the coating until fully covered.

  2. For a firmer outer shell, dip the ball in melted white chocolate first, then roll in sprinkles.


STEP 5 — Chill & Serve
