🧀 Cheesy Chicken Skillet Casserole

This dish is perfect for busy nights: one skillet, simple ingredients, and a blanket of melted cheese on top. It’s creamy, comforting, and crowd-pleasing — the kind of recipe that becomes a weekly favorite.


INGREDIENTS

Base

  • 1 lb (450 g) ground chicken OR shredded cooked chicken

  • 1 small onion, diced

  • 1 green bell pepper, diced

  • 2 cloves garlic, minced

Creamy Mixture

  • 1 can (10.5 oz) cream of chicken soup

  • 1 cup chicken broth

  • 1 cup cooked rice OR 1 cup small pasta (optional, for bulk)

  • 1 cup canned diced tomatoes or Rotel (optional for flavor)

  • 1/2 tsp paprika

  • 1/2 tsp onion powder

  • 1/2 tsp garlic powder

  • Salt & pepper to taste

Cheese Topping

  • 1 1/2 to 2 cups shredded cheese
    (Cheddar, Colby Jack, Monterey Jack, or a blend — as shown in the image)

Optional Add-Ins

  • ½ cup corn

  • ½ cup black beans

  • 1 tsp chili powder for a Tex-Mex twist

  • Jalapeños, diced


🔥 INSTRUCTIONS

1️⃣ Cook the Chicken

  1. Heat a large skillet over medium heat.

  2. Add ground chicken and cook until browned.

  3. Add diced onion, bell pepper, and garlic.

  4. Sauté until vegetables soften (3–4 minutes).

  5. Season with salt, pepper, paprika, garlic powder, onion powder.
