Ingredients (Serves 4–6)

1 lb smoked sausage (kielbasa or andouille), sliced into ½-inch rounds

1 tbsp olive oil or butter

1 medium onion, diced

2 cloves garlic, minced

4 cups potatoes (Yukon Gold or red), peeled and cut into 1-inch cubes

4 cups chicken or vegetable stock (low sodium preferred)

Salt & pepper to taste

½ tsp smoked paprika (optional)

1 bay leaf (optional)

Fresh parsley, chopped (for garnish)
Instructions
Step 1: Brown the Sausage

Heat oil in a large pot or Dutch oven over medium-high heat.

Add sliced smoked sausage and cook until browned on both sides, about 4–5 minutes. Remove and set aside.
Step 2: Sauté Aromatics

In the same pot, add the diced onion and sauté for 3 minutes until soft and translucent.

Add minced garlic and stir for 30 seconds, just until fragrant.
Step 3: Simmer with Stock

Add the potatoes, stock, smoked paprika, and bay leaf (if using) to the pot.
