Smoked Sausage & Potatoes Simmered in Stock

Simple ingredients, big comfort! This one-pot dish is savory, satisfying, and perfect for a chilly day or an easy weeknight dinner.


Ingredients (Serves 4–6)

  • 1 lb smoked sausage (kielbasa or andouille), sliced into ½-inch rounds

  • 1 tbsp olive oil or butter

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 4 cups potatoes (Yukon Gold or red), peeled and cut into 1-inch cubes

  • 4 cups chicken or vegetable stock (low sodium preferred)

  • Salt & pepper to taste

  • ½ tsp smoked paprika (optional)

  • 1 bay leaf (optional)

  • Fresh parsley, chopped (for garnish)


Instructions

Step 1: Brown the Sausage

  1. Heat oil in a large pot or Dutch oven over medium-high heat.

  2. Add sliced smoked sausage and cook until browned on both sides, about 4–5 minutes. Remove and set aside.


Step 2: Sauté Aromatics

  1. In the same pot, add the diced onion and sauté for 3 minutes until soft and translucent.

  2. Add minced garlic and stir for 30 seconds, just until fragrant.


Step 3: Simmer with Stock

  1. Add the potatoes, stock, smoked paprika, and bay leaf (if using) to the pot.
