Jerk Steak and Shrimp Over Tropical Rice

Spicy, smoky jerk-marinated steak and shrimp served over fragrant coconut-lime rice with pineapple, peppers, and a touch of sweetness. It’s a Caribbean vacation in a bowl!


Ingredients (Serves 4)

For the Jerk Steak:

  • 1 lb flank steak or sirloin, sliced thinly

  • 2 tbsp jerk seasoning (store-bought or homemade — see below)

  • 1 tbsp olive oil

  • Juice of 1 lime

For the Jerk Shrimp:

  • 1 lb large shrimp, peeled and deveined

  • 1 tbsp jerk seasoning

  • 1 tbsp olive oil

  • Juice of ½ lime

For the Tropical Rice:

  • 1 cup jasmine or basmati rice

  • 1 cup coconut milk (unsweetened)

  • 1 cup water or chicken broth

  • ½ tsp salt

  • ½ cup diced fresh pineapple (or canned)

  • ½ cup diced red bell pepper

  • 2 tbsp chopped green onions

  • Zest of 1 lime

  • Juice of ½ lime

  • Optional: 2 tbsp shredded coconut or chopped cilantro


Homemade Jerk Seasoning (if needed)
