🧁 Mini Meatloaf Muffins

Juicy, Flavorful, Perfectly Portion-Sized Meatloaves

Mini meatloaf muffins are a fun and delicious twist on classic meatloaf. They bake faster, stay juicy, and are easy to serve — especially for kids or parties.
This recipe uses diced peppers, onions, seasonings, and a savory glaze for maximum flavor.


Ingredients

For the Meatloaf Muffins

  • 2 lbs (900 g) ground beef

  • 1 cup breadcrumbs (plain or seasoned)

  • 1 small onion, finely diced

  • 1 green bell pepper, diced

  • 2 cloves garlic, minced

  • 2 large eggs

  • ½ cup milk

  • 2 tbsp Worcestershire sauce

  • 1 tbsp ketchup or tomato paste

  • 1 tbsp mustard (optional)

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

  • 1 tsp Italian seasoning

Glaze (Optional But Recommended)

  • ½ cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp Worcestershire sauce

  • 1 tsp mustard


🔥 Instructions

1. Prepare Your Oven & Muffin Pan

Preheat oven to 375°F (190°C).
Lightly grease a 12-cup muffin pan or spray with nonstick cooking spray.


2. Mix the Meatloaf

In a large bowl, combine:

  • Ground beef

  • Breadcrumbs

  • Diced onion

  • Diced green pepper

  • Garlic

  • Eggs

  • Milk

  • Worcestershire

  • Ketchup

  • Seasonings

Mix gently using your hands or a spoon — avoid overmixing to keep the meat tender.


3. Fill the Muffin Pan

Scoop the meat mixture into each muffin cup, filling them all the way to the top.
Press lightly to pack the mixture without compacting it too much.


4. Add the Glaze (Optional but Delicious)

Mix glaze ingredients in a small bowl.
Spoon a little glaze on top of each meat muffin.


5. Bake

Bake for 20–25 minutes, or until:

  • The internal temperature reaches 160°F (71°C)

  • The tops are browned and caramelized

For extra crispy edges, bake 3–5 minutes longer.


6. Rest & Serve
