Steak, Noodles & Soup Dumplings with Peanut Miso Broth & Marinated Eggs

For the Marinated Ramen Eggs

  • 4 soft-boiled eggs (boil 6–7 mins, then ice bath)

  • 1/4 cup soy sauce

  • 1/4 cup water

  • 1 tbsp mirin or rice vinegar

  • 1 tbsp brown sugar

  • Optional: slice of garlic or ginger for flavor

For the Soup Dumplings

  • 8–12 frozen or fresh soup dumplings (e.g. pork xiao long bao or any dumpling of your choice)

  • Cook per package or steam for 8–10 minutes

For the Noodles & Bowl Assembly

  • 8 oz ramen noodles, soba, or udon (cooked and drained)

  • Optional toppings:

    • Scallions

    • Toasted sesame seeds

    • Chili crisp or chili oil

    • Thinly sliced cucumber or carrots


Instructions

1. Marinate the Eggs (Make Ahead)

  • Peel soft-boiled eggs and soak in soy sauce, water, mirin, and sugar mixture for 2 to 12 hours.

  • Keep in fridge until ready to serve.


2. Cook the Steak

  • Season steak with salt, pepper, soy sauce, and sesame oil.

  • Sear in a hot skillet over medium-high heat for 3–4 mins per side (medium-rare). Let rest 10 mins, then slice thin.


3. Make the Peanut Miso Broth

  • In a pot, heat sesame oil and sauté garlic and ginger for 1–2 minutes.

  • Add broth, bring to a simmer.

  • Whisk in miso, peanut butter, soy sauce, rice vinegar, chili sauce, and honey.

  • Simmer gently for 10–15 minutes. Adjust salt and spice to taste.


4. Cook Dumplings & Noodles

  • Steam dumplings until cooked through (usually 8–10 mins).

  • Cook noodles according to package, rinse and drain.


5. Assemble the Bowls

  1. Pour hot peanut miso broth into deep bowls.

  2. Add a portion of noodles to each.

  3. Place slices of steak on top.

  4. Add 2–3 dumplings per bowl.

  5. Halve and add a marinated egg.

  6. Garnish with scallions, sesame seeds, chili oil, or cucumber ribbons if desired.

  • Make it vegetarian: Swap steak for grilled tofu or mushrooms, use veggie broth, and veggie dumplings.

  • Broth richness: Add a splash of coconut milk for creamy texture.
