  • 3–4 ripe but firm pears (Bartlett, Anjou, or Bosc), thinly sliced
  • 2–3 tbsp brown sugar (adjust to sweetness of pears)
  • 1 tbsp granulated sugar (optional)
  • 1 tbsp cornstarch (or 1 1/2 tbsp flour) to thicken juices
  • 1 tsp cinnamon
  • 1/2 tsp ground ginger
  • Pinch of nutmeg (or allspice)
  • 1 tsp vanilla extract
  • 1 tbsp lemon juice (keeps pears bright + balances sweetness)
  • Pinch of salt

For assembling

  • 1 egg, beaten (egg wash for golden crust)
  • 1–2 tbsp coarse sugar (for crunch and sparkle)
  • 1 tbsp butter, cut into tiny pieces (optional, for richer filling)
