Soft & Chewy Coconut Chocolate Chip Cookies

Crispy on the outside, soft and tender inside, packed with coconut and melty chocolate chips — the perfect bakery-style cookie you’ll bake over and over again.


🍪 Ingredients

Dry Ingredients

  • 1 ½ cups all-purpose flour

  • ½ teaspoon baking soda

  • ½ teaspoon baking powder

  • ½ teaspoon salt

Wet Ingredients

  • ½ cup (1 stick) unsalted butter, softened

  • ½ cup granulated sugar

  • ½ cup brown sugar

  • 1 large egg

  • 1 ½ teaspoons vanilla extract

Mix-ins

  • 1 cup sweetened shredded coconut

  • 1 cup semi-sweet chocolate chips


🍪 Instructions

1. Prepare your oven & baking tray

  • Preheat the oven to 350°F (175°C).

  • Line a baking sheet with parchment paper or a silicone mat.

2. Mix the dry ingredients

In a medium bowl, whisk together:

  • Flour

  • Baking soda

  • Baking powder

  • Salt
    Set aside.

3. Cream the butter & sugars

In a large bowl:

  1. Beat the softened butter until creamy (about 1 minute).

  2. Add the granulated sugar + brown sugar.

  3. Beat for 2–3 minutes, until light and fluffy.
    This step is key for thick, soft cookies.

4. Add the egg & vanilla

  • Mix in the egg until fully combined.

  • Add vanilla extract.

Mix only until smooth.

5. Add dry ingredients to wet ingredients

  • Pour the dry mixture into the wet mixture.

  • Stir gently with a spatula until the dough comes together.
    Do NOT overmix — this keeps the cookies tender.

6. Add the coconut & chocolate chips
