Dry Ingredients

1 ½ cups all-purpose flour

½ teaspoon baking soda

½ teaspoon baking powder

Wet Ingredients

½ cup (1 stick) unsalted butter, softened

½ cup granulated sugar

½ cup brown sugar

1 large egg
-
1 ½ teaspoons vanilla extract
Mix-ins

1 cup sweetened shredded coconut

1 cup semi-sweet chocolate chips
🍪 Instructions
1. Prepare your oven & baking tray

Preheat the oven to 350°F (175°C).

Line a baking sheet with parchment paper or a silicone mat.
2. Mix the dry ingredients
In a medium bowl, whisk together:

Flour

Baking soda

Baking powder
-
Salt
Set aside.
3. Cream the butter & sugars
In a large bowl:

Beat the softened butter until creamy (about 1 minute).

Add the granulated sugar + brown sugar.

Beat for 2–3 minutes, until light and fluffy.
This step is key for thick, soft cookies.
4. Add the egg & vanilla

Mix in the egg until fully combined.

Add vanilla extract.
Mix only until smooth.
5. Add dry ingredients to wet ingredients

Pour the dry mixture into the wet mixture.

Stir gently with a spatula until the dough comes together.
