Ingredients

Turkey Wings

  • 3–4 lbs (1.4–1.8 kg) turkey wings (whole wings or drumettes/flats)
  • 2 tbsp olive oil (or melted butter)
  • 1 1/2 tsp salt (adjust to taste)
  • 1 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp dried thyme (or poultry seasoning)
  • Optional: pinch cayenne or chili flakes

Onion Gravy

  • 2 tbsp butter
  • 1 large onion, thinly sliced
  • 3 cloves garlic, minced
  • 3 tbsp all-purpose flour
  • 3 cups (720 ml) turkey stock or chicken broth
  • 1 tsp Worcestershire sauce (optional)
  • 1/2 tsp thyme (optional)
  • Salt and pepper, to taste

Optional Add-Ins

  • 1 bell pepper, sliced
  • 8 oz (225 g) mushrooms, sliced
  • 1/2 cup (120 ml) heavy cream (for creamy gravy)
