Ingredients
Classic cheddar-chive filling (recommended)
- 48 Ritz crackers (about 1 sleeve) — makes 24 sandwiches
- 115 g cream cheese, softened
- 90 g mayonnaise (or Greek yogurt for a lighter option)
- 80 g shredded cheddar (or finely grated for smoother texture)
- 2 tbsp finely chopped green onions (or chives)
- 1 tbsp finely chopped pickles (optional, for tang)
- 1/2 tsp garlic powder
- 1/4 tsp smoked paprika (optional)
- Salt and black pepper, to taste
Optional garnish ideas: extra chopped chives, paprika dust, everything bagel seasoning, tiny pickle slices,
crispy bacon bits, or a thin jalapeño ring (for heat lovers).
Instructions
1) Make the filling
- In a bowl, mix softened cream cheese and mayonnaise until smooth and creamy.
- Stir in cheddar, chives/green onions, pickles (if using), garlic powder, and paprika (if using).
- Taste and season with salt and black pepper.
2) Assemble the sandwiches
- Lay out 24 Ritz crackers on a tray (flat side up).
- Pipe or spoon about 1–2 tsp filling onto each cracker.
- Top with the remaining 24 crackers and gently press to adhere.
