Peanut Butter Lunch Lady Cookie Bars

Thick, soft, and frosted with creamy peanut butter icing — these cookie bars taste just like the ones your lunch lady used to make (but better)!


Ingredients (Makes a 9×13-inch pan)

For the Cookie Bars:

  • 1 cup unsalted butter, softened

  • 1 cup creamy peanut butter

  • 1 cup granulated sugar

  • 1 cup packed light brown sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • 2 cups all-purpose flour

  • 1 tsp baking soda

  • ½ tsp salt

For the Peanut Butter Frosting:

  • ½ cup creamy peanut butter

  • ¼ cup butter, softened

  • 2 cups powdered sugar (sifted)

  • 2–4 tbsp milk

  • ½ tsp vanilla extract


‍ Instructions

Step 1: Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Grease a 9×13-inch baking pan or line with parchment.


Step 2: Make the Cookie Dough

  1. In a large bowl, cream butter, peanut butter, granulated sugar, and brown sugar until fluffy.

  2. Beat in eggs and vanilla until well combined.

  3. In a separate bowl, whisk together flour, baking soda, and salt.

  4. Gradually mix dry ingredients into the wet ingredients until smooth.
