Gingerbread Cinnamon Rolls with Cream Cheese Frosting

🎅 Instructions


1. Make the Dough

  1. In a large bowl, whisk together warm milk, sugar, and yeast. Let sit 5–10 minutes until foamy.

  2. Add egg, egg yolk, and melted butter; whisk to combine.

  3. Add flour, salt, cinnamon, ginger, nutmeg, and allspice.

  4. Mix with a wooden spoon or stand mixer until a shaggy dough forms.

  5. Knead 8 minutes by hand or 5 minutes in a mixer until soft and elastic.

  6. Place into a lightly oiled bowl, cover, and let rise 1–1.5 hours, until doubled.


2. Prepare the Filling

  1. Beat softened butter until smooth.

  2. Add brown sugar, granulated sugar, molasses, cinnamon, ginger, and nutmeg.

  3. Mix until creamy and spreadable.


3. Shape the Rolls

  1. Punch down the risen dough.

  2. Roll into a 14×18 inch rectangle on a lightly floured surface.

  3. Spread the gingerbread filling evenly over the dough.

  4. Roll tightly from the long edge into a log.

  5. Cut into 12 even rolls using floss or a serrated knife.

  6. Place rolls in a greased baking dish.

  7. Cover and let rise 30–45 minutes, until puffy.


4. Bake

  1. Preheat oven to 350°F (175°C).

  2. Bake the rolls for 22–26 minutes, until lightly golden.

  3. Remove and cool slightly before frosting.


5. Make the Cream Cheese Frosting

  1. Beat cream cheese and butter until fluffy.

  2. Add vanilla and salt.

  3. Mix in powdered sugar until smooth and creamy.

  4. Spread generously over warm cinnamon rolls.


6. Decorate

  • Place a cute mini gingerbread man on top of each frosted roll.

  • Add holiday sprinkles if desired.
