Slow Cooker Stuffed Pepper Soup: All the Cozy Flavor of Stuffed Peppers, One Easy Pot

the time it takes to prep and bake them, Slow Cooker Stuffed Pepper Soup is your new best friend.
It has all the same comforting flavors in a simple, hearty soup that practically cooks itself. You get savory ground beef,
sweet bell peppers, tomatoes, and warm seasonings, plus rice that turns the broth into something rich and satisfying.

This soup is perfect for busy weeknights, chilly days, meal prep, and freezer-friendly cooking. It’s also flexible:
swap beef for turkey, use brown rice or cauliflower rice, add beans, make it spicy, or sneak in extra veggies. Because it’s made
in a slow cooker, the flavors deepen beautifully while you get on with your day.

Ingredients:

Soup base:

  • 1 1/2 lb (680g) ground beef (or ground turkey)
  • 1 medium onion, diced
  • 3 bell peppers (red/green/yellow), diced
  • 3 cloves garlic, minced
  • 1 (28 oz / 794g) can crushed tomatoes
  • 1 (14.5 oz / 411g) can diced tomatoes
  • 4 cups beef broth (or chicken broth)
  • 2 tbsp tomato paste (optional, for richer flavor)

Seasonings:

  • 1 1/2 tsp Italian seasoning
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1 to 1 1/2 tsp salt (start with 1 tsp and adjust)
  • 1/2 tsp crushed red pepper flakes (optional)

Rice & finishing:

  • 3/4 cup uncooked white rice (or 1 cup cooked rice added at the end)
  • Optional: 1 tbsp Worcestershire sauce
  • Optional: 1 cup shredded cheddar or mozzarella for serving
  • Fresh parsley for garnish

Instructions:

  1. Brown the beef (recommended).
    In a skillet over medium heat, cook ground beef until browned. Drain excess fat.
    This step adds flavor and keeps the soup less greasy.
  2. Load the slow cooker.
    Add browned beef, onion, bell peppers, garlic, crushed tomatoes, diced tomatoes, broth, tomato paste, and seasonings.
    Stir well.
  3. Cook.
    Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours.
