Cheesy Mozzarella Meatloaf

A Juicy, Flavor-Packed Meatloaf Smothered in Melted Cheese

This meatloaf is moist, tender, deeply seasoned, and topped with a generous layer of gooey melted mozzarella.
It’s comfort food at its absolute best — perfect for family dinners, leftovers, and meal-prep.


Ingredients

For the Meatloaf

  • 2 lbs (900 g) ground beef

  • 1 cup breadcrumbs

  • 1 small onion, finely diced

  • ½ green bell pepper, diced (optional)

  • 2 cloves garlic, minced

  • 2 large eggs

  • ½ cup milk

  • 2 tbsp Worcestershire sauce

  • 1 tbsp ketchup

  • 1 tbsp mustard (optional)

  • 1 tsp Italian seasoning

  • 1 tsp salt

  • 1 tsp black pepper

  • 1 tsp paprika

For the Tomato Glaze

  • ½ cup ketchup

  • 2 tbsp brown sugar

  • 1 tbsp Worcestershire sauce

  • 1 tsp mustard

For the Cheese Topping

  • 2 cups shredded mozzarella (or a blend of mozzarella + cheddar)

  • Fresh parsley for garnish


🔥 Instructions

1. Preheat & Prepare

Preheat oven to 375°F (190°C).
Line a baking dish or loaf pan with foil or lightly grease it.


2. Mix the Meatloaf

In a large bowl, combine:

  • Ground beef

  • Breadcrumbs

  • Onion & bell pepper

  • Garlic

  • Eggs

  • Milk

  • Worcestershire

  • Ketchup

  • Seasonings

Mix gently until combined.
Avoid overmixing — it makes the meatloaf dense.


3. Shape the Loaf

Form the meat mixture into one large or two medium loaves inside the pan.
Make sure they are evenly shaped for even cooking.


4. Add the Tomato Glaze
