This recipe creates the same rich, golden broth and tender texture you see in the picture—simple ingredients, slow simmering, and layers of flavor that taste like home.

Ingredients

For the Soup

  • 2 tablespoons butter or olive oil

  • 1 large onion, diced

  • 3 large carrots, chopped

  • 3 celery stalks, chopped

  • 3–4 cloves garlic, minced

  • 10 cups chicken broth (homemade or store-bought)

  • 2–3 cups cooked chicken, shredded (rotisserie works great)

  • 2 bay leaves

  • 1 teaspoon dried thyme

  • 1 teaspoon dried parsley (or 2 tbsp fresh)

  • 1 teaspoon turmeric (optional, for color & health benefits)

  • Salt and black pepper to taste

For the Noodles

  • 3 cups egg noodles (wide or homestyle)

Optional Add-Ins

  • 1 tablespoon lemon juice

  • Fresh parsley for garnish

  • A pinch of red pepper flakes

  • 1 teaspoon chicken bouillon for richer flavor

🍲 Instructions

1. Sauté the Aromatics

Heat butter or oil in a large pot over medium heat. Add diced onion, chopped carrots, and chopped celery. Cook for 6–8 minutes until softened.

Stir in garlic and cook for 1 minute more until fragrant.

2. Build the Broth

Pour in the chicken broth and stir well. Add bay leaves, thyme, parsley, turmeric, salt, and pepper. Bring everything to a boil.

Reduce heat to low and simmer for 20 minutes so the flavors fully develop.

3. Add the Chicken

Add shredded chicken to the pot. If using leftover rotisserie chicken, this is the perfect way to stretch your leftovers into a full meal.

Simmer for another 10–15 minutes.

4. Cook the Noodles Separately (Best Texture!)

Boil the egg noodles in a separate pot until just tender.
This keeps them from becoming mushy in the soup.

Drain and set aside.

(If you want, you can cook the noodles directly in the soup. Just add them during the last 10 minutes of simmering.)

5. Combine and Adjust Seasoning

Add cooked noodles to the soup pot. Taste and adjust with more salt, pepper, thyme, or chicken bouillon if desired.

Remove bay leaves before serving.

6. Serve Hot

Ladle into bowls and garnish with fresh parsley. Enjoy with crusty bread or crackers.
