Grilled Filet Mignon with Garlic Butter, Shrimp, Sunny Eggs, Mashed Potatoes & Asparagus

Ingredients (Serves 2)

For the Filet Mignon:

  • 2 filet mignon steaks (6–8 oz each, about 1½ inches thick)

  • Salt & black pepper

  • 1 tbsp olive oil

  • 2 tbsp butter

  • 2 cloves garlic, smashed

  • 2 sprigs rosemary or thyme

For the Garlic Herb Butter (compound butter):

  • 4 tbsp unsalted butter, softened

  • 1 small clove garlic, finely minced

  • 1 tsp finely chopped fresh parsley

  • Pinch of salt

  • Optional: 1 tsp lemon zest or a dash of Dijon mustard

For the Shrimp:

  • 8–10 large shrimp, peeled & deveined

  • 1 tbsp olive oil or butter

  • 1 garlic clove, minced

  • 1 tbsp lemon juice

  • Salt & pepper to taste

  • Optional: pinch of chili flakes

For the Mashed Potatoes:

  • 1 lb Yukon Gold or Russet potatoes, peeled & cubed
