Ingredients (Serves 2)

For the T-Bone Steak:

  • 1 large T-bone steak (1½ – 2 inches thick)

  • Salt & freshly ground black pepper

  • 1 tbsp olive oil

  • 2 tbsp unsalted butter

  • 2 garlic cloves, smashed

  • 2 sprigs fresh rosemary or thyme

For the Garlic Herb Butter Sauce:

  • 3 tbsp unsalted butter

  • 1 garlic clove, minced

  • 1 tbsp chopped fresh parsley or chives

  • 1 tsp Dijon mustard

  • ½ tsp lemon juice

  • Salt & black pepper to taste

For the Mashed Potatoes:

  • 1 lb (about 3–4 medium) Yukon gold potatoes, peeled & chopped
