- 1 tbsp baking powder (NOT baking soda—helps crisp the skin)
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp paprika (optional)
- 1 tbsp neutral oil (optional, mainly for air fryer)
Sticky pineapple glaze:
- 3/4 cup pineapple juice (from canned pineapple or bottled)
- 1/4 cup soy sauce (low sodium preferred)
- 1/3 cup brown sugar (packed)
- 2 tbsp honey (for shine)
- 2 tbsp rice vinegar (or apple cider vinegar)
- 3 cloves garlic, minced
- 1 tsp fresh ginger, grated (or 1/2 tsp ground ginger)
- 1 tbsp ketchup (optional, adds color and tang)
- 1 tbsp cornstarch + 2 tbsp water (slurry)
