🍲 Amish Snow Day Soup

Why We Call It “Snow Day Soup”

In many Amish and rural households, snow days meant slowing down, gathering around the table, and enjoying a pot of thick, creamy vegetable soup simmering on the stove. This version blends tender potatoes, sweet corn, carrots, and savory smoked meat for a rustic, soul-warming dish that tastes like home.

It’s simple, filling, and wonderfully cozy — the kind of soup that makes winter feel a little warmer.


🥣 Ingredients

(Serves 6–8)

Base & Vegetables

  • 4 medium potatoes, peeled and diced

  • 3 large carrots, peeled and chopped

  • 1 cup celery, diced

  • 1 small onion, chopped

  • 2 cups frozen or canned corn

  • 6 cups chicken broth (or enough to cover the veggies)

Meat

  • 1½ cups diced ham or cooked crumbled bacon or smoked sausage
    (Any smoked meat works great — Amish kitchens use what they have.)

Creamy Thickener

  • 1 cup milk or half-and-half

  • 1 cup heavy cream

  • 3 tbsp butter

  • 3 tbsp flour

  • Salt & pepper to taste

Optional Add-ins

  • 1 tsp garlic powder

  • ½ tsp thyme

  • ½ tsp paprika

  • 1 cup shredded cheddar cheese (for extra creamy richness)

  • Fresh parsley for garnish


👩‍🍳 Instructions

1. Start the Soup Base

In a large pot or Dutch oven, combine:

  • Potatoes

  • Carrots

  • Celery

  • Onion

  • Corn

  • Smoked ham or sausage

  • Chicken broth

Bring to a boil, then reduce to a simmer.
Cook 15–20 minutes, or until the potatoes and carrots are fork-tender.
