️ Steak Fajitas & Rice

A sizzling skillet of marinated steak strips, colorful peppers, and onions — paired with fluffy seasoned rice. A Tex-Mex favorite that’s perfect for weeknights or fiesta nights!


Ingredients (Serves 4)

For the Steak & Marinade:

  • 1.5 lbs flank steak or skirt steak, thinly sliced against the grain

  • Juice of 2 limes

  • 2 tbsp olive oil

  • 2 cloves garlic, minced

  • 1 tsp ground cumin

  • 1 tsp chili powder

  • 1 tsp smoked paprika

  • 1/2 tsp onion powder

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • Optional: 1 tbsp soy sauce or Worcestershire for umami

️ For the Fajita Veggies:

  • 1 red bell pepper, thinly sliced

  • 1 yellow or orange bell pepper, sliced

  • 1 green bell pepper, sliced

  • 1 medium onion, sliced

  • 1 tbsp olive oil

  • Salt and pepper to taste

For the Mexican-Style Rice:

  • 1 cup long grain white rice

  • 2 tbsp oil or butter

  • 1/4 cup finely chopped onion

  • 2 cloves garlic, minced

  • 1/2 tsp cumin

  • 1/4 tsp chili powder

  • 2 cups chicken broth

  • 1/4 cup tomato sauce (or 2 tbsp tomato paste)

  • Salt to taste
