Buckeye Bars

A no-bake, ultra-creamy peanut butter base topped with a smooth chocolate layer—these Buckeye Bars taste just like classic Buckeye candies but are SO much easier to make!


🧈 INGREDIENTS

For the Peanut Butter Layer

  • 1 cup creamy peanut butter

  • 1 stick (½ cup) unsalted butter, softened

  • 1 teaspoon vanilla extract

  • 2 ½ cups powdered sugar, sifted

For the Chocolate Topping

  • 2 cups semi-sweet chocolate chips

  • 2 tablespoons coconut oil (optional, for smoother melting & glossy finish)


🍫 INSTRUCTIONS

STEP 1 — Prepare the Pan

  1. Line an 8×8-inch or 9×9-inch square baking pan with parchment paper.

  2. Leave an overhang on two sides so you can lift the bars out easily.


STEP 2 — Make the Peanut Butter Base

  1. In a mixing bowl, beat together:

    • softened butter

    • creamy peanut butter

    Mix until smooth and creamy (about 1–2 minutes).

  2. Add vanilla extract and mix again.

  3. Add powdered sugar gradually, mixing until a thick dough-like consistency forms.

  4. Transfer mixture into the prepared pan and press firmly into an even layer using:

    • a spatula

    • or the back of a measuring cup

  5. Chill in the fridge while you prepare the chocolate topping.


STEP 3 — Make the Chocolate Layer

  1. Add chocolate chips and coconut oil to a microwave-safe bowl.

  2. Heat in 20–30 second intervals:

    • stir between each interval

    • continue until fully melted and smooth

  3. Pour melted chocolate over the peanut butter layer.

  4. Tilt the pan gently to spread the chocolate into a smooth, even layer.


STEP 4 — Chill and Slice

  1. Refrigerate the pan for 1–2 hours, or until the chocolate is fully set.

  2. Lift bars out using parchment paper.

  3. Allow to sit at room temperature for about 5 minutes (this prevents cracking while slicing).

  4. Slice into squares or rectangles using a sharp knife.
