A no-bake, ultra-creamy peanut butter base topped with a smooth chocolate layer—these Buckeye Bars taste just like classic Buckeye candies but are SO much easier to make!
🧈 INGREDIENTS
For the Peanut Butter Layer

1 cup creamy peanut butter

1 stick (½ cup) unsalted butter, softened

1 teaspoon vanilla extract

2 ½ cups powdered sugar, sifted
For the Chocolate Topping

2 cups semi-sweet chocolate chips

2 tablespoons coconut oil (optional, for smoother melting & glossy finish)
🍫 INSTRUCTIONS
STEP 1 — Prepare the Pan

Line an 8×8-inch or 9×9-inch square baking pan with parchment paper.

Leave an overhang on two sides so you can lift the bars out easily.
STEP 2 — Make the Peanut Butter Base

In a mixing bowl, beat together:

softened butter

creamy peanut butter
Mix until smooth and creamy (about 1–2 minutes).

Add vanilla extract and mix again.

Add powdered sugar gradually, mixing until a thick dough-like consistency forms.

Transfer mixture into the prepared pan and press firmly into an even layer using:

a spatula

or the back of a measuring cup

Chill in the fridge while you prepare the chocolate topping.
STEP 3 — Make the Chocolate Layer

Add chocolate chips and coconut oil to a microwave-safe bowl.

Heat in 20–30 second intervals:

continue until fully melted and smooth

Pour melted chocolate over the peanut butter layer.

Tilt the pan gently to spread the chocolate into a smooth, even layer.
STEP 4 — Chill and Slice

Refrigerate the pan for 1–2 hours, or until the chocolate is fully set.

Lift bars out using parchment paper.

Allow to sit at room temperature for about 5 minutes (this prevents cracking while slicing).

Slice into squares or rectangles using a sharp knife.
